How the Cookbook Idea was Born
Dr. Maleigha Watts and I have worked on more than a handful of projects together. She has been a guest speaker and presenter for me over the last six years. We’re always throwing ideas back and forth about what people would like to see from us. Last fall, she jokingly (or not), said: “what if we made a cookbook together?”
After hearing that for years from Beetroot followers, I thought, “I’m not a chef, but I just might have something to offer.” Feeling nervous, but excited, we jumped into the project this spring and leafed through our recipe binders, wrote down notes and changes, and got to cookin’… together.
A 94-page cookbook with 60+ dairy-free and gluten-free recipes
We share what our good food standard is and why we should appreciate all our unique wellness journeys. There is also a dash of humor throughout the pages of the cookbook.

Dusting off my camera
I’m not a professional photographer by any means, but being in marketing, I have always utilized the skill. I learned the basics in college (even developed film in the darkroom), and I have just run with it on my own since then. But, when this cookbook idea came about this year, I hadn’t shot commercial photos for nearly six years, let alone food photography. I thought I could maybe figure it out.
I shot food twice a week for a month at my friend Anne’s, farmhouse. She had plenty of natural light, unique surfaces, and space for me to stretch out and exercise the photo-creative in me. I hope you enjoy the recipe photos by me!
