Water Kefir - Step Aside Kombucha

A kefir without dairy involved? Yep. And probiotic rich? Yep. I was quite amazed to learn that kefir can have up to 30 strains of beneficial microorganisms (yeasts and bacteria). Compare that to three to four strains that yogurt contains!

It's like a fizzy soda and you can create that carbonation easily with a swing-top bottle. The "grains" that ferment the soda are reusable and multiply each batch, so you can keep making more or you can donate to a friend.

What's needed to ferment it? Just a mason jar, some sugar (like organic cane sugar or maple syrup), filtered water, and the water kefir grains. It typically ferments within 24-48 hours, but it depends on environmental factors. After the fermentation, that's when the fun happens with bottling it and adding in flavors, like lavender, lemon, or ginger!
